Did some ribs on the charcoal BBQ this weekend and they turned out great. Smoky and tender.

They’re not that burnt I personally wouldn’t call them charcoal.
In this case, I think it is the BBQ which is charcoal, not the ribs.
Do you offset grill these? Or are they straight over the coals?
Offset when the coals were the hottest then directly above as they cooled
