No name yet but I will make this again, maybe with home fermented ginger beer for a Christmas batched cocktail.

2oz cognac

1oz Heirloom pineapple amaro

.75oz ginger syrup plus a squeeze of agave

2oz lemon juice (it was a very juicy lemon - this the additional sweetener)

2oz fizzy water

Shake first 4 ingredients with ice, add the soda water, pour over fresh ice.

      Shredded a bunch of ginger into a pot, put about 1/2 liter of water, brought to a boil, turned off the heat and stirred in 250g white sugar and 250g brown sugar, let that sit until cool with the ginger in it then strained it out to make the syrup. Really as much ginger as you can stand to grate, I don’t think there can be too much.
