I’m born in Silesia which now is part of Poland but before WWII was German.
Anyway, we make some specific potato dumplings there. I moved from there in 1989, and I probably had them since there somewhere. But today was the first time I made them myself.

Mostly brown sauce from frying meat and then some cream in it, so gravy basically.
For potato dumplings, sour cream is probably perfect.

Where does one acquire straight up potato starch?
Bob’s Red Mill, Streit’s and Manischewitz all make it, so look in the Kosher or Baking sections. I’m pretty sure it’s used instead of cornstarch during Passover.
