Anchovy butter
1 stick unsalted butter, softened.
¼ cup parsley, minced
2 anchovy fillets, rinsed and minced
1 tbsp lemon juice
2 cloves garlic, minced.- Fold everything together in a bowl.
- Transfer to plastic wrap.
- Wrap tightly
- Refrigerate for at least an hour.
Toast cut into strips for dipping in the yolk.
We have geese. Got them to protect the chickens from hawks and go mow the yard. But as a bonus we get eggs each spring.
Yeah. I’m hopeful that they build the nest inside their coop or outside of the fenced in portion of the yard.
Once they have selected a safe and easy to access nest we typically take a permanent marker and mark an egg to be left behind to encourage them to continue using that spot. That egg gets tossed after a week or so and replaced.
We tried decoy eggs with chickens and found them to be ineffective and dangerous to snakes. But also stupidly expensive I made some decoy eggs out of cedar with the idea that chickens sense of smell is bad and snakes would avoid those. Three legged dog stole those. Maybe I will try making some goose sized cedar eggs.

They are friendly enough eight months of the year. Minimal hissing and no attempts to eat your legs the moment you turn around.
But for four months out of the year they are aggressive dinos that you can’t turn your back on. If they aren’t on the nest they aren’t too bad. If they are on the nest you will need to carefully pick them up without getting bit or beaten with their wings. And relocate them before you try to get the eggs.
We found a second nest today with five eggs in it. The goose was on it but wasn’t ready to fight me so she got up and wandered away on her own.
Most of the year it takes about four minutes to put away all the ducks, chickens and geese at night. But for the next few months it will take somewhere between four minutes and 20. Because now there may be one or more geese hiding on a nest somewhere on the property and we have to go find them because they can’t stay out all night due to predators. Which is another reason to find the eggs. If a raccoon or possum finds an egg before we do they will start coming back and that’s a danger to everyone.
I also use Costco. I make sure to render all the trimmings into tallow so nothing goes through waste.
I’ve done it myself. It is not cheaper than buying it in March when it is usually on sale. I cooked some fresh and canned the rest up for later meals.

Take some red wine, vinegar or apple cider vinegar and some salt in quick pickle on those onions you’ve sliced. Put them on your sandwich.
I honestly don’t know how people afford to get fast food delivered to them. People have to learn how to cook. Food delivery services are stealing from the poor. And by poor I mean people who are 12 paychecks or less away from being homeless.

Yeah, it was all the Splendid Table and Milk Street type experts that got me to finally try it despite my reservations. The results were too superior to ignore. Been doing it ever since.
Speaking of which I stopped listening to Splendid Table more than a dozen years ago. I should tune in to remember why I removed it from my podcast subscriptions. I’m thinking it was because back then podcasts couldn’t be played at 2.5x and it was way too slow.
Yes. I used to hate the idea. I was a butter or olive oil guy. But after trying mayo for the toasting it was impossible to deny that it offered the cheapest, best coverage, and most superb results. I still do olive oil for some specialty situations but mayo is now the default. So much so that it changed the way I stock my fridge.
I rarely ever used mayo. I’d make it as I needed it. But after using it for grilled cheese I started buying the commercial stuff. When making mayo you have to plan a few hours in advance. But grilled cheese is a spur of the moment kind of thing you don’t start hours in advance. So now I buy mayo. In fact I bought some today because my old jar is almost dead.
This is Walmart brand sandwich bread. I had a loaf in the oven for tomorrow while I cooked this up. Whole wheat bread is hard because the ground wheat germ cuts the gluten up. I’m not the best person for wheat bread tips. Maybe make a separate post about that here or in the baking group. I know you have to do multiple rises but you also can’t overwork the dough because of that cutting issue. Rise, punch, rise, punch, rise, score, bake. Like you gotta start a day ahead of time.





It only needs two fish out of a tin so make sure you have a recipe ready for the rest of it. My leftovers are going on pizza. Caesar salad is also a good one even though it isn’t part of the original recipe.
