Nice! I have a set of carbons and they’re by far my favorite! Bamboo are alright, nice and flexible, but sometimes they grab. Metal are nice and slippery, but they’ll hurt my hands after a while. My carbons though, they’re the perfect balance!

Good on you for using your stash! I have yarn that’s older than that, so I wouldn’t worry too much about it!
As fun as it would be to see a llama in an airport, having them around would kick up my allergies big time, which would be hell to deal with on a plane with all the pressure changes thrown in.

Do you know how to knit? If not, a hat is a decent beginner project, and something you have a vested interest in helps too.
I had trouble with this too when I was learning, I think everyone does. I got better after experimenting with holding and wrapping the yarn and finding a way that was comfortable and easy to control. For me, I wrap the yarn around my pinky, curl my ring finger over the yarn, and then loop it over my middle finger. This gives me full control while also still letting the yarn slide through easily enough.
Tldr, keep experimenting with your holds until you find The One.

Assuming you already know how to knit and just have never knit socks, I recommend making a pair of baby socks first. They’re the same shape and technique, just a lot smaller.
I generally will use a good quality machine washable and dryable acrylic yarn for anything that is knit for a baby or child, since it’s easy to care for. Baby’s are cute but gross and will put everything in their mouths, and parents are generally sleep deprived, so I want an item to be as easy to care for as possible. They hold up to abuse, they don’t shrink, and the colors usually don’t bleed. Save the cashmere blends for yourself!
