This is one of my favorite meals. I like to slather a bit of mustard on it too, but I make my own Guinness mustard. 1/2 pint of Guinness, a jar of brown mustard, in a pot, simmer until it cooks down and thickens again.

It was. I need to make it more often so I can do it without reading a recipe. I just hardly ever remember to buy tripe and hominy.
It’s kind of similar to the consomme in a way. But then you add beef tripe and hominy and other stuff and make it into a soup. I eat tortillas with everything.
I regret not making my own tortillas for it, or at least going to the panaderia to get some. I hate these paper thin store bought ones. But the menudo was good.
This was from a few months ago, so I’d have to dig up the recipe. It’s not something I make often so I haven’t built up the courage to wing it on my own.
Chuck roast is nearly as expensive as brisket where I live. The only cheap beef anymore is garbage 73/27 ground beef in a tube.
Nah it’s some cheap wood. I found the table on the side of the road and use it mostly as a buffet for snacks when I have company. Or as a place for Ringo to sprawl out on. But now that you mention it, a leather top would be pretty sweet on that thing.
