Another one from Smuggler’s Cove; you can probably tell that I’m trying to use up my pineapple juice! This one is unique among the recipes in that book in that it features Aquavit, a Scandinavian liquor that is close to gin, but typically infused with caraway and dill. The dill notes are especially pronounced in the Gamle Ode Celebration Aquavit that I used, and come out especially strongly in the finish. Delightful in contrast to the juicy start!

  • 1 ½ oz orange juice
  • 1 ½ oz pineapple juice
  • ½ oz lemon juice
  • ¼ oz Demerara Syrup
  • ¼ oz Orgeat
  • 1 ½ oz aquavit
  • 1 lemon wedge

Shake with ice and strain into a glass filled with cracked ice. Garnish with a lemon wedge speared with a cocktail umbrella.

    A friend who is a sailor gave me a recipe, pineapple juice, lime, full proof coconut rum and cilantro, it’s great! I also love fermented pineapple juice, see the tepache and ginger beer recipes in the non alcoholic thread, or you could try champagne yeast.

    This looks good but I still haven’t liked gin. Every time I put it in anything I just think vodka would work better. Will get there eventually I’m sure. I do like Mastica, that would work in this.

      I really love the idea of your sailor friend giving you recipes! That’s probably normal for an area near the water 😂

      How does the cilantro work in there: muddled, syrup, garnish, something else? Sounds awesome! Sort of reminds me of one I made from PDT that had muddled green bell pepper (and it actually worked!).

        I shook it with the other ingredients, cilantro is pretty delicate, the flavor came through and some bits of green in the drink. And yes she says “well I am a sailor and sailors like rum!” But stressed the coconut rum must be full proof, some are more like liqueurs.

        Green pepper? Huh. I do love jalapeno flavor, the raw jalapenos are delicious. Not this year’s (well last year now) garden ones, too spicy, but the grocery store jalapenos, muddled with tequila for a margarita, yum.

        ETA: but really if you have too much pineapple, ferment some, it is ridiculously good.
